Madroño Ranch is proud to host the New School of Traditional Cookery, a series of ethical hunting, fishing, and cooking classes offered throughout the year by Austin’s Dai Due Butcher Shop and Supper Club.
Classes focusing on hunting deer and feral hogs and on freshwater fly-fishing offer intensive and multifaceted looks at food sourcing and preparation for serious students of sustainable eating. These three-day sessions are limited to no more than eight guests at a time (both beginners and experts are welcome), and generally involve instruction in processing, butchering, and cooking, along with fabulous meals prepared by chef Jesse Griffiths and his Dai Due staff.
